1. Chicken Sausage Tortellini Veggie Bake

This delicious recipe is adapted from our favorite soup and is incredibly quick and easy. You'll need chicken sausage, small tortellini, pepper, onion, and tomatoes.

Instructions:

  1. Boil water and cook the tortellini according to package directions.
  2. Chop the sausage, pepper, onion, and tomatoes into bite-sized pieces.
  3. Toss everything into the air fryer basket.
  4. Air fry at 380°F for 5 minutes, stir, then add diced tomatoes and cook for another 5 minutes.
  5. Stir in the drained tortellini.

This recipe is like our favorite soup without the broth. It's quick, easy, and absolutely delicious!

2. Shrimp Fajitas

Shrimp in the air fryer is one of the fastest meals you can make. For this recipe, I'm using small shrimp and a frozen pepper and onion blend.

Instructions:

  1. Place the veggies in the air fryer basket to cook off the frozen moisture.
  2. Add shrimp and mix in homemade fajita seasoning (recipe in show notes).
  3. Air fry at 400°F for 4 to 6 minutes, depending on shrimp size.

These shrimp fajitas are quick, easy, and perfect for a healthy meal.

3. Chicken and Frozen Broccoli

Chicken and broccoli are two of my favorite things to make in the air fryer.

Instructions:

  1. In a large bowl, mix 2 tbsp avocado oil, 1 tsp minced garlic, 1 tbsp soy sauce, 1/2 tsp sesame seed oil, 1 tsp rice vinegar, and sriracha to taste.
  2. Slice 1-2 chicken breasts and add to the marinade along with a bag of frozen broccoli.
  3. Air fry at 380°F for 12-15 minutes, stirring halfway through.

This dish is flavorful, healthy, and ready in no time!

4. Air Fryer Feta Pasta

Inspired by a viral TikTok recipe, this feta pasta is adapted for the air fryer with only six ingredients.

Instructions:

  1. Cook penne pasta on the stove.
  2. Preheat the air fryer and add oil and garlic to an oven-safe dish.
  3. Halve grape tomatoes and add them to the dish, then place a block of feta cheese in the center.
  4. Air fry at 320°F for 8 minutes, then press down on the feta and tomatoes to break them apart.
  5. Air fry for an additional 3 minutes at 380°F.
  6. Mix the cheese and tomatoes together and combine with the cooked pasta.

This air fryer feta pasta is simple and delicious!

5. Veggie Enchiladas

These veggie enchiladas are a comforting and quick meal.

Instructions:

  1. Mix 2 tsp cumin, 2 tsp paprika, 1 tsp salt, 1 tsp garlic powder, and a pinch of cayenne pepper.
  2. In a bowl, combine 2 cups frozen peppers and onions, 1 cup frozen corn, 1 can black beans (washed and drained), 1/2 cup enchilada sauce, 1 tbsp oil, and the seasoning mixture.
  3. Spread the mixture in an air fryer-safe dish and cook at 380°F for 10 minutes.
  4. Add cooked rice to the mixture.
  5. Fill tortillas with the mixture, fold, and place in the air fryer.
  6. Mist with avocado oil and air fry at 380°F for 3-4 minutes.
  7. Add enchilada sauce and cheese, then cook at 350°F for 3 more minutes.
